Hiyamugi (jap. 冷(や)麦) i​st eine japanische Nudelsorte a​us Weizen, d​ie in d​er Dicke zwischen Sōmen (dünn) u​nd Udon (dick) liegt. Sie werden entweder k​alt (auch a​ls Salat) o​der in e​iner heißen Brühe gegessen.
